Try this easy but excellent recipe from two Epicurean sisters who run top-notch sustainable shoot lunches and events, as well as a small cafe, in Chelsea. squidandpear.com

Just line a muffin tin with Iberico ham (or whatever ham you like), pop some peas & broadbeans in the bottom, crack an egg, add some grated Cornish Yarg & bake. Easy!
