We always look out for early signs of spring with an extra keen eye here at the dairy. As soon as the first nettle leaves start to appear, we take note of the richest picking grounds and return several weeks later – from mid April onwards – to replenish our stocks. The wild garlic leaves are also much treasured by us – it’s surprising how varied they can be in size and colour. We only want the greenest, and their shape counts too. It’s a bit of a beauty contest going on in the Cornish woodlands. The prize? Having the honour of being wrapped around one of our award winning Yargs!
