It’s about this time of year that we start to look for shoots of green in the woodlands and hedgerows of Cornwall. We’re on the look out for healthy and vibrant nettle leaves and the wonderful wild garlic that grows so prolifically and fragrantly here in spring time. But our criteria is set high. No damage of any sort – so no nibbles or crushed edges, and we need the leaves to be a certain size. One year, we found a patch of nettle leaves that grew as big as a man’s hand – that was a good season!
