A moment of greatness for the humble nettle.
The origin of Cornish Yarg began with Alan Gray in 1984, who found a 16th century cheesemaking recipe in his attic. After a few trials, a new cheese emerged – Yarg. Inspiration for the name came from spelling ‘Gray’ backwards.
Fast forward 40 years, Lynher Dairy is the only maker of Cornish Yarg and its iconic nettle covering.
Made by hand, Cornish Yarg develops naturally occurring moulds, forming a bloomy tapestry amongst the nettle leaves.

Milk Pasteurised cow’s milk
Maturation 4-6 weeks
Aroma Delicate, lactic and mushroomy.
Texture Slightly open and cumbly core, creamy under the rind as it matures.
Flavour Lactic, creamy, buttery, delicate but complex.
Pears, quince, a fruity white wine such as a Riesling.
Wrap in wax paper, store below 8 degrees, serve at room temperature.
Whole truckles of Yarg have a use-by of 6 weeks from despatch date. We recommend turning your cheese once a week to prevent a soggy bottom.
Once cut, enjoy within 10 days.
