Peach & Kern Salad

Grilled peaches, candied pecans and shavings of Cornish Kern. A bright salad made for summer that leans into caramel flavours.

Serves 2 as a main, 3 as a side

Ingredients

  • 1 bag of lamb’s lettuce (or similar)
  • 2 ripe peaches
  • 100g pecan nuts
  • 50g caster sugar
  • Shaved Kern cheese (tailor to your taste!)

Dressing

  • 50ml cider vinegar
  • 50ml olive oil
  • 1 tsp wholegrain mustard
  • 25g honey

 

Method

  1. Prepare the dressing by blending all ingredients in a jug using a food processor or stick blender.
  2. Candy the pecans: Melt sugar over low heat until caramelised. Stir in the pecans, then pour onto baking paper to cool. Be careful – both sugar and pan will be hot.
  3. Grill the peaches: Cut into quarters, rub with olive oil, and sear on a hot griddle pan for about a minute on each side.
  4. Assemble the salad by combining all elements and serving fresh.
  5. Enjoy!
