Mmmmelted Yarg!
January does a good line in dark, long days, and this year more so than ever. We need as much comfort as we can get, and here’s one solution – cheese on toast! Yarg’s low melting point makes it the ideal cheese to reach for a quick lunch, a simple supper or an indulgent snack (or all three – 2021 calls for radical thinking!)
Here’s our recipe for Yarg Rarebit, if you’re feeling posh.
Make a béchamel sauce with unsalted butter, flour and whole milk. Stir in a large handful of grated Yarg with salt, pepper and nutmeg (season to taste) and cook until the cheese is melted. Toast your bread, spread with mustard then the cheese sauce and grill until golden and bubbling.
