The word ‘artisan’ is bandied around a lot these days but in our case, our cheeses really are made by hand. Each spring, we hand pick the nettle and wild garlic leaves. The curd is blocked by hand, packed into moulds by hand, and once in the maturing rooms, we turn the truckles by hand too, checking each one. Our fantastic team of nettlers wrap each and every cheese by hand, an art in itself.
So if you ever see Cornish Yarg described as ‘artisan’, you can be assured the word is, in our case, entirely deserved!
